Just one question..could I use precut frozen sweet potatoes ? Beautiful, fluffy couscous cooks in about 10 minutes and makes the perfect bed for this saucy stew (grab some here at our online shop). I used Bone broth instead of vegetable and heavy cream instead of coconut. Served in over cous cous and it was so good. Add the leek and cook, stirring, until it is tender, about 5 minutes. Leeks belong to the same family as onions and garlic. Will definitely be making this again!
